Roasted
Asparagus, pan seared monkfish liver with ramps
and shiitake mushrooms -- balsamic vinaigrette
Method:
For
the asparagus -- cut off ends and peel ends.
Heat oven to 475F. Put asparagus in an oven
proof pan and coat lightly with oil salt and
pepper. Roast for 5-6 minutes.
For
the monkfish liver -- clean and cut into 1/2
wedges. Sauté in duck fat or oil of choice.

For
ramps and shiitake mushrooms - sauté
in small amount of olive oil
Balsamic
Vinaigrette -- 1 part balsamic vinegar 4 parts
olive oil.
Assemble
as shown above
