Notes
Parboil
diced turnips broccoli for 5 minutes and refresh.
Saute shiitake mushrooms with duck fat and duck
cracklings. Set to rest on paper towel.
Sear
fish skin side down in duck fat till crispy.
Turn and rest in hot pan with flame off till
cooked through.
Reduce
duck
stock.
Assemble...
as shown above and garnish with microgreens.
