Pressure Cooking Chicken Legs

With a cost of around $2/serving and a prep and cooking time of 20 minutes-- pressure cooking is worth experimenting with.

If you want a fast cheap meal that tastes great then it's worth it to purchase a pressure cooker. Since they are so energy efficient they will pay for themself over time so it's worth it to get a good one. This chicken thigh was cooked in a pressure cooker at 15 psi's for only 8 minutes. It was then dried off with a paper towel and seared in bacon fat to produce a crispy skin.

Vegetables

Pearl onions were boiled for 4 minutes in salted water then quickly refreshed to allow easy removal of skin. Bacon slab was cut into 1/4 inch slivers and sauteed in a non-stick pan. The bacon was set on a paper towel and the onions were browned in the bacon fat along with a small amount petit (frozen peas). Bacon fat was later used to sear the chicken leg.

Sauce

The sauce used here was left over from a previous pressure cooked meal: Osso Buco with Red Wine Sauce
