Par
boil 5 minutes potatoes, brussel sprouts. Refresh
in cold water. Sate bacon slices till crispy.
Set aside on paper towel. Sate sliced shiitake
mushrooms in oil, set aside on paper towels.
Sate
bay scallops in bacon fat. Rest on paper towel.
Pour
off bacon fat. Add 1/4 cup of white wine and
deglaze pan. Reduce liquid to 1 T then swirl
in 1 tsp. butter off flame.
